ONce is Not eNuF’’

Absolutely agreed with Lap that baking is a healthy activity, thus 5 days after the 2nd cakey day, we decided to have the third round. Our lenglui C.I.R.C.L.E member, Ms Tan Kee San was joining us to make sheperd’s pie, lotus pau and jelly moon-cake.

Sometimes, we can just do things follow our feeling.
Simply just added in all the ingredients according to my own measurement. Haha”

Nice to see, nice to touch and nice to eat.

Oh no...I totally felt in love with the Pie. CheeZzeee’’

Used up half packet of 3kg lotus paste to make all of these.

RaYa BreaK: Have FuN With BakinG 220809

This time was Lap’s turn who requested to re-bake the cheesecake as he wished to learn and make it for his family. Again, we gathered at Lydia’s house. Besides baking cheesecake, Lydia also shared another great recipe with us, the moist chocolate cake, meanwhile I, the one who always come out with some awesome ideas, suggested to make moon-cakes. After discussing with Lydia and Lin hui, we decided to make both crystal skin moon-cake and jelly moon-cake.

He intended to become the new X-generation House-man.
See he was concentrating in separating the egg yolks.
Personally, i think he passed the test.

These were the usual procedures for baking..

After trying many times, finally we got one which was nicer in shape.
Below were our products of the today..
Blissful chocolate topping.
Err..for the base, its texture supposed to be spongy but ended up like Malay kuih.
Probably because we boiled the chocolate for too long.

Less spongy compared to the one we made yesterday.
Probably because of the difference shown in the texture of beaten egg white foam.


Don’t be cheated with their appearance.
The jelly moon-cakes in fact were a bit flabby.
Added in too much water.

The cake was too delightful to be resisted by him.

Suddenly felt that want to eat the Japanese cottony cheesecake mentioned by Lydia before, thus suggested to Lydia to have a small gathering at her house, at the sametime bake the cheesecake which I craved for long time ago.

The phrase “Cheese = Fattening” was played in Lin Hui’s thought. So, besides doing baking, we went for exercising to burn up the extra calories.

Another precious activity we had was meeting up with Francis, the super busy future doctor who is 500 km further away from us at Kelantan. Lap ordered us some nice dishes, including sweet sour pork, steamed bean curd, Asam fish and “three big super stars” vege.

CrysTaL Skin MOonCake


Ingredients:
Crystal Skin:
water 350ml
pandan leaf essence 1 teaspoon
icing sugar 180g
koh flour 240g
shortening 60g
Filling:
lotus paste 1000g
melon seed/ olive nut 60g
Methods:
  1. Mix the koh flour and icing sugar well and add in water.
  2. Knead the mixture into a dough and add in the shortening.
  3. Slightly bake the seeds for 5 minutes and leave aside.
  4. Wrap 75g crystal skin dough with 75g paste then press them into the mould.

Keep the mooncake in the fridge for 1-2 hours before it is served.

HaPPy MOonCake FestiVaL

JeLLy MOonCake

Ingredients:
agar-agar powder 5g
jelly powder 10 g
water 700g
sugar 200g
coconut milk 400g
condensed milk 100g
red bean paste 500g
pandan essence 2 teaspoons
colouring 1 teaspoons
Methods:
  1. Boil the water.
  2. Mix well the agar-agar and jelly powder together with the sugar.
  3. Add the mixture into the hot water.
  4. Add in coconut milk, condensed milk and pandan essence.
  5. Stir it well and make sure all the mixture is dissolved.
  6. Add in the colouring.
  7. Pour the mixture into the moulds and let them to cool down.
  8. Once the mixture is halfly solidified, add on the red bean paste and fill it up with the mixture.
  9. Leave the mixture to be solidified and keep it into the fridge before it is served.

Notes:

  • Besides red bean paste, you can also choose other pastes, such as lotus, yam, durian, pumpkin etc. according to your own preference.
  • Highly recommend you to choose the AYAM BRAND pasteurised liquid form coconut milk if you are using the instant coconut milk.

SHePerD's Pie ''


Ingredients:
Topping (A):
1 kg potatoes (Russert)
100g butter
1 teasp salt
4 oz milk
1/2 teasp pepper
parmesan cheese shredded
Filling (B)
500g minced beef/chicken
2 large onions chopped
3/4 teasp salt
1 chicken stock cube added into 1 cup hot water
1 1/2 tablesp dark soya sauce
2 tablesp cornflour added with 2 teasp water
1 1/2 teasp Lea n Perrins sauce added acc to taste
5 tablesp oil
1 large carrot
1 tin mushroom sliced

Method:
  1. Wash potatoes, boil, mash, add (A).
  2. Stir fry filling until cooked.
  3. Place filling at bottom of oven proof glass dish, add potato mixture on top, sprinkle cheese.
  4. Bake in oven 200 degree celcius for 30 - 40 minutes.

Moist CHoCoLaTe CaKe

Chocolate Topping:
200gm whipped cream
40gm butter
240gm chopped chocolate
Method:
  1. Heat whip cream till it boils.
  2. Add chopped chocolate and mix well.
  3. Add butter and mix well.
  4. Let is rest one night.

Chocolate Cake:

Part A.
2oz cocoa powder (Vanhouten brand)
2oz sugar
1 cup water
Method:
  1. Mix together and double boil until sugar dissolves.
  2. Leave to cool.
Part B.
6 eggs
7oz sugar
8oz self-raising flour
8oz butter
Method:
  1. Melt the butter and leave it to cool.
  2. Seperate the egg yolk and egg white.
  3. Beat egg white with half sugar until light.
  4. Beat egg yolk, half sugar, butter, and 'A' until well mixed.
  5. Add flour and mix.
  6. Fold in the egg white.
  7. Bake for about 35 minutes at 170°C.
  8. Apply chocolate to middle of cake and as topping.

JaPaNese CottonY CHeese Cake''


Part A:
250g Philadephia Cream Cheese
50g Butter100ml Fresh Milk
Part B:
60g Superfine Flour (top or cake flor)
20g Cornflour6 Egg Yolks
1 tbsp Lemon Juice
¼ tsp Salt
Part C:
6 Egg Whites
¼ tsp Cream of Tartar
140g Fine Granulated Sugar

Methods:
  1. Melt (A) in double boiler and cool the mixture until room temperature.
  2. Fold in (B) and mix well.
  3. Whisk egg whites with cream of tartar until foamy and then add in sugar and whisk until soft peaks form.
  4. Fold in half of the (C) into the mixture and mix well.
  5. Then add in the other half and mix them evenly.
  6. Pour the mixture in 8 inches round cake pan (lightly grease and line the bottom and side of the pan with greaseproof paper).
  7. Finally, bake in water bath for 1 hour 10 minutes or until set or golden brown at 160 °C.

Special date.. Good weather..
Sunny Sunday..

Had DimSum as our breakfast..
The restaurant was superb crowded..
It was our turn after waiting for 30 minutes..
I like the egg tarts served in this restaurant..
It was slightly different from those sold at the bakery as it contains kaya filling within..
Some new menu were introduced..
Including Charsiew, Siew yoke, sweet desserts, dumpling..
Great satisfaction with the Charsiew.. yummy..

Heading to Temiang..
Passed by my former secondary school and reached our 1st destination..
We did some praying before started our photo-snapping session..






Departed to our 2nd destination..
The whole journey we chatted happily..
In fact, was me and lydia who were noisy-ing at behind while the driver, WaiYean was driving patiently and the other passeger, CheeKian was listening openly at the in front..
Superb jam when reached Alor Gajah, so we did some dangerous activities since the polices won't be around..

Arrived Melacca town around 3pm..
Time for our lunch..
At 1st think of having Nyonya food at the restaurant recommended by lap, but the restaurant was at its resting time..
Ended up we had our lunch at Newton food court..
We tried the Popiah sold by Lydia's friend bro..
Super bulky Popiah with plentiful filling ingredients..
Anyway, I like the popiah as it was not too dry..

After a simple lunch, supposedly should be called it as teabreak,
We went to Jonker Street..
Again, it was crowded..
People mountain, Cars sea..
I bought two trendy handy fans after tried the one bought by WaiYean..
ChunSeng was craving for Nyonya Cendol and Nyonya Laksa but the restaurant was full of people and the queue was superb long..
Finally we entered a chicken rice ball shop to satisfy our craving for Nyonya Cendol and forced to order some chicken rice balls and side dishes as well..

After filling-up our tummy, we walked along the Jonker street again..
Looking for pineapple cookies..
One of my favorite CNY cookies but again it was fully booking.. Sobsob..
We stopped at a stall selling malt-sugar wrapped fruits stick..
Tried the mixed fruit stick..
Taste not bad, just that all of us coughed badly after swallowing the tiny china pear..
Still wondering why it happened so..



CheeKian wanted to eat Satay Celup..
In order to get to the shop, we drove round and round at the Melacca town for some time..
Anyway, we finally able to find the shop after Lydia called to her friend for help.. Haha..
This was the moment when we were thinking of Lap..
