ONce is Not eNuF’’

Absolutely agreed with Lap that baking is a healthy activity, thus 5 days after the 2nd cakey day, we decided to have the third round. Our lenglui C.I.R.C.L.E member, Ms Tan Kee San was joining us to make sheperd’s pie, lotus pau and jelly moon-cake.

Sometimes, we can just do things follow our feeling.
Simply just added in all the ingredients according to my own measurement. Haha”

Nice to see, nice to touch and nice to eat.

Oh no...I totally felt in love with the Pie. CheeZzeee’’

Used up half packet of 3kg lotus paste to make all of these.

Did some Touch up for the pau.

RaYa BreaK: Have FuN With BakinG 220809

This time was Lap’s turn who requested to re-bake the cheesecake as he wished to learn and make it for his family. Again, we gathered at Lydia’s house. Besides baking cheesecake, Lydia also shared another great recipe with us, the moist chocolate cake, meanwhile I, the one who always come out with some awesome ideas, suggested to make moon-cakes. After discussing with Lydia and Lin hui, we decided to make both crystal skin moon-cake and jelly moon-cake.

He intended to become the new X-generation House-man.
See he was concentrating in separating the egg yolks.
Personally, i think he passed the test.

These were the usual procedures for baking..

After trying many times, finally we got one which was nicer in shape.
Below were our products of the today..
Blissful chocolate topping.
Err..for the base, its texture supposed to be spongy but ended up like Malay kuih.
Probably because we boiled the chocolate for too long.

Less spongy compared to the one we made yesterday.
Probably because of the difference shown in the texture of beaten egg white foam.


Don’t be cheated with their appearance.
The jelly moon-cakes in fact were a bit flabby.
Added in too much water.

The cake was too delightful to be resisted by him.

These were our take-away.

Suddenly felt that want to eat the Japanese cottony cheesecake mentioned by Lydia before, thus suggested to Lydia to have a small gathering at her house, at the sametime bake the cheesecake which I craved for long time ago.

The phrase “Cheese = Fattening” was played in Lin Hui’s thought. So, besides doing baking, we went for exercising to burn up the extra calories.

Another precious activity we had was meeting up with Francis, the super busy future doctor who is 500 km further away from us at Kelantan. Lap ordered us some nice dishes, including sweet sour pork, steamed bean curd, Asam fish and “three big super stars” vege.

CrysTaL Skin MOonCake


Ingredients:
Crystal Skin:
water 350ml
pandan leaf essence 1 teaspoon
icing sugar 180g
koh flour 240g
shortening 60g
Filling:
lotus paste 1000g
melon seed/ olive nut 60g
Methods:
  1. Mix the koh flour and icing sugar well and add in water.
  2. Knead the mixture into a dough and add in the shortening.
  3. Slightly bake the seeds for 5 minutes and leave aside.
  4. Wrap 75g crystal skin dough with 75g paste then press them into the mould.

Keep the mooncake in the fridge for 1-2 hours before it is served.

HaPPy MOonCake FestiVaL

JeLLy MOonCake

Ingredients:
agar-agar powder 5g
jelly powder 10 g
water 700g
sugar 200g
coconut milk 400g
condensed milk 100g
red bean paste 500g
pandan essence 2 teaspoons
colouring 1 teaspoons
Methods:
  1. Boil the water.
  2. Mix well the agar-agar and jelly powder together with the sugar.
  3. Add the mixture into the hot water.
  4. Add in coconut milk, condensed milk and pandan essence.
  5. Stir it well and make sure all the mixture is dissolved.
  6. Add in the colouring.
  7. Pour the mixture into the moulds and let them to cool down.
  8. Once the mixture is halfly solidified, add on the red bean paste and fill it up with the mixture.
  9. Leave the mixture to be solidified and keep it into the fridge before it is served.

Notes:

  • Besides red bean paste, you can also choose other pastes, such as lotus, yam, durian, pumpkin etc. according to your own preference.
  • Highly recommend you to choose the AYAM BRAND pasteurised liquid form coconut milk if you are using the instant coconut milk.
